Another kind of meatza: Ham, salami and cheese
A few years ago I wrote about a meatza made with lean ground beef and bison (). This post is about another kind of meatza, one that takes a lot less time to prepare. In fact, this one is very quick, and still very nutritious.
The recipe below is for a meal that feeds 3-6 people. If you are preparing this for an opinionated family, and you do not want to be accused of preparing “grilled ham and cheese” for them, you can always add some sautéed vegetables to the ham.
- Place 2 to 3 lbs of folded ham into a sheet pan. There is no need to coat the pan, as some of the water and fat in the ham will seep out and prevent sticking.
- Add some dry seasoning and butter. For the dry seasoning, I suggest a mix of garlic powder and cayenne pepper.
- Add a layer of genoa salami, and another layer of swiss cheese.
- Preheat oven to 375 degrees Fahrenheit.
- Bake the meatza for about 15 minutes.
The photo montage above shows the different stages of preparation and the final product. Since ham cuts tend to be very lean, the amount of fat in the entire meatza will normally depend heavily on the amount of added butter, salami, and cheese.
In this kind of meatza, the protein-to-fat ratio will normally be greater than 1. I think a ratio closer to 2 is ideal for those semi-sedentary office workers who do moderate exercise. The reason is that fat is the most calorie-dense macronutrient. Protein is the least calorie-dense macronutrient.
You do lose something with this dish, as you do with hot dishes in general. You lose the probiotic bacteria that would normally be found in significant amounts in the ham, salami, and cheese. These are all fermented foods that are better consumed raw.

Beef heart
I have posted here before about the nutrition value of beef liver, nature’s “super-multivitamin”. I have even speculated that grain-fed beef liver could be particularly nutritious (). What I should have done also was to post about beef liver’s equal in terms of nutrition value – beef heart. In this post I am correcting the omission.
Contrary to popular belief, not all organ meats are inherently fatty. The fat that is attached to an animal’s heart after slaughter, even if from grain-fed cattle, can be easily removed. The resulting cut will have a very low fat-to-protein ratio; often significantly less than fat-trimmed non-organ muscle cuts.
I don't say this because I consider fat to be unhealthy. In fact, dietary fat is necessary for the absorption of fat-soluble vitamins, and can thus be uniquely healthy. However, fat also is the most calorie-dense macronutrient. Even though the caloric values of macronutrients vary based on a number of factors, excess calories tend to be stored as excess body fat.
A 100 g portion of cooked beef heart, as in the photos below, will have 28 g of protein and only 5 g of fat (see this link, you may have to reset the serving size field: ). The photos below show two different beef heart dishes I have prepared. In the first the beef heart was barbecued. In the second it was simmered in a pan with vegetables for about 8 h.
Below is a simple recipe for the barbecued beef heart, which I recommend cutting into steaks. For the simmered beef heart I suggest cutting it into chunks that resemble cubes; then you can just add the dry seasoning powder mentioned below to the water, some vegetables, enough water to last about 8 h, and leave it simmering.
- Prepare some dry seasoning powder by mixing salt, garlic power, chili powder, and a small amount of cayenne pepper.
- Season the beef heart steaks at least 2 hours prior to placing them on the grill.
- Grill with the lid on, checking the meat every 10 minutes or so. (I use charcoal, one layer only to avoid burning the surface of the meat.) Turn it frequently, always putting the lid back on.
- If you like it rare, 20 minutes (or a bit less) may be enough.
Beef heart is a very good source of vitamins and minerals, and is one of the least expensive cuts of meat (in meat sections of grocery stores, not in paleo restaurants). Many people prefer beef heart over beef liver because of beef heart’s texture.
While I have restricted my comments in this post to “beef” heart, the hearts of most animals that are eaten by humans (e.g., chicken, duck, deer, turkey) are fairly nutritious, and they seem to have that uniformly meaty texture that many people like.
Here is an interesting factoid. The largest known carnivorous marsupial of modern times was the now extinct Tasmanian tiger. It was an elusive and solitary animal, and the subject of the beautiful film "The Hunter (2001)" (). The Tasmanian tiger was known to frequently eat only the hearts of prey. I hope this is not why it became extinct!

Dried mussels: A little plate with 160 g of protein (plus some comments on high-protein low-carbohydrate dieting)
Many hunter-gatherer groups employed various methods of drying to preserve meats. Drying also increases significantly the protein content of meats; this is the case with dried mussels. I discussed this effect of drying before here with respect to small fish (). The photo below is of a plate with about 240 g of dried mussels that I prepared using the simple recipe below.
To prepare your mussels as in the photo above, you will have to steam and then dry them. You can season the mussels after you steam them, but I rarely season mine. Almost none of the food I eat requires much seasoning anyway, because I use nature’s super-spice, which makes everything that has a high nutrient content taste delicious: hunger ().
- Steam the mussels for about 10 minutes, or until all are open.
- Remove the mussels from the shells; carefully, to avoid small shell pieces from coming off into the mussels (they are not kind to your teeth).
- Preheat the oven to about 200 degrees Fahrenheit, and place the mussels in it (on a tray) for about 1 hour.
- Leave the mussels in the oven until they are cold, this will dry them further.
About 240 g of mussels, after drying, will yield a meal with a bit more than 160 g of protein – i.e., the proportion of protein will go from about 20 percent up to about 67 percent. In this case, most of the calories in the meal will come from the protein, if you had nothing else with it, adding up to less than 800 calories.
This comes in handy if you need to have lunch out, as the dried mussels can be carried in a plastic bag or container and eaten cold or after a light re-heating in a microwave. To me, they taste very good either way; but then again anything that is nutritious tends to taste very good when you are hungry, and I rarely have breakfast. I often eat them with pre-cooked sweet potato, which I eat with the skin (it tastes like candy).
You may want to think of dried mussels prepared in this way as a protein supplement, but a very nutritious one. You will be getting a large dose of omega-3 fats (3.11 g) with less omega-6 fats than you usually get through fish oil softgels (where n-6s are added for stability), about 1,224 percent of the recommended daily value (RDV) of magnesium, 461 percent of the RDV of selenium, 1,440 of the RDV of vitamin B12, a large dose of zinc, and (interestingly) almost 100 percent of the RDV of vitamin C.
Since mussels are very low in the food chain, accumulation of compounds that can be toxic to humans is not amplified by biomagnification (). But, still, mussels can be significantly affected by contaminants (e.g., petroleum hydrocarbons), so sourcing is important. The supermarket chain I use here in Texas, HEB, claims to do very careful sourcing. Telltale signs of contamination are developmental problems such as thin shells that shatter easily and stunted growth ().
For those readers who are on a low-carbohydrate diet, please pay attention to this: there is NO WAY your body will turn protein into fat if you are on a low-carbohydrate diet, unless you have a serious metabolic disorder (see this post: , and this podcast: ). And I mean SERIOUS; probably way beyond prediabetes. Do not believe the nonsense that has been circulating in some areas of the blogosphere lately.
A high-protein low-carbohydrate diet is one of the most effective diets at reducing body fat, particularly if you do resistance exercise (and you do not have to do it like a bodybuilder). That is not to say that a high-fat low-protein diet (like the "optimal diet") is a bad idea; in fact, the optimal diet is a good option if you do not do resistance exercise, but that is a topic for a different post.

Dried meat: Homemade beef jerky
You can dry many types of meat, including beef, pork, goat, deer, and even some types of seafood, such as mussels. Drying meat tends to significantly increase the meat’s protein content per gram, often more than doubling it. It also helps preserve the meat, as bacteria need an aqueous environment to grow; adding salt helps further prevent bacterial growth.
Dried meat preparation and consumption was common among the Plains Indians (e.g., of the Cheyenne, Comanche, and Lakota tribes), and also a valuable trade item for them. They often ground the dried meat into a powder, mixing fat and berries with them; the result of which was pemmican. Many other hunter-gatherer cultures around the world have incorporated dried meat into their diets.
Below is a recipe for homemade beef jerky, which is very close in terms of nutrition content to the dried meat of the Plains Indians's time; that is, the time when the Plains Indians subsisted mostly on bison. Commercial beef jerky typically has a lower nutrient-to-calorie ratio, in part because sugar is added to it. The recipe is for beef jerky, but can be used to make jerky with bison meat as well.
- Cut about 3 lbs of beef muscle into thin strips (see photo below). Ideally you should buy it partially cut already, with most of the fat trimmed. Cutting with or against the grain doesn’t seem to make much difference, at least to me.
- Prepare some dry seasoning powder by mixing salt and cayenne pepper.
- Season the strips and place them on a tray with a grid on top, so that the fat that will come off the meat is captured by the tray and doesn’t drip into the oven.
- Preheat the oven to about 180 degrees Fahrenheit, and place the strips in it until you can easily pull a piece of the meat off with your fingers (see photos below, for an idea of how they would look). This should take about 1 hour or so. You will not technically be “baking” or "cooking" the meat at this temperature, although the digestibility of the final product will be comparable to that of cooked meat – i.e., greater digestibility than raw meat.
- Leave the strips in the oven until they are cold, this will dry them further.
Homemade beef jerky, prepared as above, is supposed to be eaten cold. In this sense, it could be thought of as a bit like salami, but with a higher protein-to-fat ratio. If your kids eat this on a regular basis, I suspect that their future orthodontist needs will be significantly reduced. Homemade beef jerky, like the commercial one, requires some serious chewing.
The dried strips of meat can be kept outside the fridge for a long time, but if you intend to keep them for more than a few weeks, I would suggest that you keep them in the fridge. Interestingly, adding sugar apparently increases the non-refrigerated shelf life of beef jerky even further. It doesn’t improve the flavor though, in my opinion.
This is a zero-carbohydrate food item, which may be a good choice for those who are insulin resistant or diabetic, and also for those on low-carbohydrate or just-enough-carbohydrate diets. Often I hear bodybuilders who eat multiple meals per day to say that it is hard for them to prepare high-protein snacks that they can easily carry with them. Well, beef jerky is one option.

How to make white rice nutritious
One of the problems often pointed out about rice, and particularly about white rice, is that its nutrition content is fairly low. It is basically carbohydrates with some trace amounts of protein. A 100-g portion of cooked white rice will typically deliver 28 g of carbohydrates, with zero fiber, and 3 g of protein. The micronutrient content of such a portion leaves a lot to be desired when compared with fruits and vegetables, as you can see below (from Nutritiondata.com). Keep in mind that this is for 100 g of “enriched” white rice; the nutrients you see there, such as manganese, are added.
White rice is rice that has had its husk, bran, and germ removed. This prevents spoilage and thus significantly increases its shelf life. As it happens, it also significantly reduces both its nutrition and toxin content. White rice is one of the refined foods with the lowest toxin content.
Another interesting property of white rice is that it absorbs moisture to the tune of about 2.5 times its weight. That is, a 100-g portion of dry white rice will lead to a 250-g portion of edible white rice after cooking. This does not only dramatically decrease white rice’s glycemic load () compared with wheat-based products in general (with some exceptions, such as pasta), but also allows for white rice to be made into a highly nutritious dish.
If you slow cook almost anything in water, many of its nutrients will seep into the water. All you have to do is to then use that water (often called broth) to cook white rice in it, and you will end up with highly nutritious rice. Typically you will need twice as much broth as rice, cooked for about 15 minutes – e.g., 2 cups of broth for 1 cup of rice.
You can add meats to the white rice, such as pulled chicken or shrimp; add some tomato sauce to that and you’ll make it a chicken or shrimp risotto. You can also add vegetables to the rice. If you want your rice to have something like an al dente consistency, I recommend doing these after the rice is ready; i.e., after you cooked it in the broth.
For the white rice-based dish below I used a broth from about two hours of slow cooking of diced vegetables; namely red bell peppers, carrots, celery, onions, and cabbage. After cooking the rice for 15 minutes, and letting it "sit" for a while (another 15 minutes with the pan covered), I also added the vegetables to it.
As a side note, the cabbage and onion tend to completely dissolve after 1 h or so of slow cooking. The added vegetables give the dish quite a nutritional punch. For example, the cabbage alone seems to be a great source of vitamin C (which is not completely destroyed by the slow cooking), the anti-inflammatory amino acid glutamine, and the DNA repair-promoting substance known as indole-3-carbinol ().
The good folks over at the Highbrow Paleo group on Facebook () had a few other great ideas posted in response to my previous post on the low glycemic load of white rice (), such as cooking white rice in bone broth (thanks Derrick!).

Ground meat treats: Beef and bison meatza
At the time of this writing, there was no Wikipedia article for the term “meatza”, which surprised me a bit given the number of recipes on the web. In fact, I could not find anything concrete about the dish’s tradition or history.
Another thing that surprised me about this dish is how much my family and I like it. It has become a regular weekend treat for us for quite some time now.
The recipe below is for a meal that feeds 4-8 people. Like in my previous recipe for a zucchini and onion meatloaf (), the ground beef used here has little fat, and thus a relatively low omega-6 content. Most of the fat comes from the ground bison, which has a higher omega-3 to omega-6 ratio.
- Prepare some dry seasoning powder by mixing sea salt, parsley flakes, garlic powder, chili powder, and a small amount of cayenne pepper.
- Mix 2 lb of very lean ground beef (96/4) with 1 lb of ground bison.
- Add the dry seasoning and a whole egg to the ground meat mix.
- Vigorously mix by hand until you get a homogeneous look.
- Place the mix into a sheet pan coated with olive oil. Richard’s suggestion of creating edges helps keep the sautéed vegetables on top, when they are added later ().
- Preheat oven to 375 degrees Fahrenheit.
- Bake the meatza for about 15 minutes.
- Grate 1 lb of aged cheese.
- Slice one tomato, half an onion, and one green bell pepper, and sauté them in olive oil.
- Drain the meatza after if comes out of the oven, and add the sautéed vegetables to the top, together with half a can of tomato sauce.
- Add the 1 lb of grated aged cheese on top of the vegetables and tomato sauce.
- Return meatza to the oven, still at 375 degrees Fahrenheit, and bake it for about 10 minutes.
The photo montage above shows a side dish of baked potatoes and zucchini. That is optional, as the meatza has vegetables added to it. I usually cut the meatza into 8 rectangular pieces. Each rectangle will have about 50 g of protein and 20 g of fat. The fat will be primarily saturated and monounsaturated (both healthy), with a good balance of omega-3 and omega-6 fats. Each piece of meatza will also be a good source of vitamins B12 and B6, niacin, calcium, zinc, selenium, and phosphorus.

Ground meat treats: Zucchini and onion meatloaf
A cousin of the meatball (), the meatloaf is a traditional German dish. The recipe below is for a meal that feeds 4-8 people. The ground beef used has little fat, and thus a relatively low omega-6 content. Most of the fat comes from the 1 lb of ground grass-fed lamb in the recipe, which has a higher omega-3 to omega-6 ratio than the regular (i.e., non-grass-fed) ground beef. The egg acts as a binder. Leave the potato out if you want to decrease the carbohydrate content; it does not add much (nutrient numbers are provided at the end of the post).
- Prepare some dry seasoning powder by mixing salt, parsley flakes, garlic powder, chili powder, and a small amount of cayenne pepper.
- Grate one zucchini squash and one peeled potato. Cut half an onion into small pieces of similar size.
- Mix 2 lb of very lean ground beef (96/4) with 1 lb of ground grass-fed lamb.
- Add the dry seasoning, zucchini, potato, onion and a whole egg to the ground meat mix.
- Vigorously mix by hand until you get a homogeneous look.
- Place the mix into a buttered casserole dish with the shape of a loaf.
- Preheat the oven to 375 degrees Fahrenheit.
- Bake the meatloaf for about 1 hour and a half.
It is a good idea to place the casserole dish within a tray, as in the photo above. The meatloaf will give off some of its juices as it bakes, which may overflow from the casserole dish and make a mess in your oven. Below is a slice of meatloaf served with a side of vegetables. The green spots in the meatloaf are the baked zucchini squash pieces.
A thick slice like the one on the photo above will have about 52 g of protein, 15 g of fat, and 6 g of carbohydrates (mostly from the potato). That'll be about 1/5 of the whole meatloaf; the slice will weigh a little less then 1/2 lb (approximately 200 g). Liver and meatballs separated by a wall of sweet potatoes
A commenter wrote here some time ago that she liked to eat rice because rice can be easily used to separate food items on a plate. One can just as easily use sweet potatoes to do that; preparing the sweet potatoes in much less time than the rice. This post explains how, with a simple recipe.
- Cut up half of a sweet potato as shown on the first photo below, adding coconut oil or butter to prevent the pieces from sticking to a microwave-safe saucepan.
- Microwave the sweet potato pieces in high heat for about 5 minutes.
- Use the sweet potatoes to separate food items as in the second photo below, showing beef liver and meatballs with their respective sauces.
- Cover the dish with a wet paper towel to prevent spilling, and microwave it for as long as needed to heat up the meats. In this case, 2 minutes in high heat was enough. That will further cook the sweet potato, but not to the point of burning it.
The above assumes that the beef liver and meatballs are leftovers that had been cooked before. In this example, we have about ½ lb of meat and ½ of a sweet potato. As far as plant foods are concerned, sweet potatoes are at the very high end of the nutrition density scale. This is a very nutritious and satiating meal (for me) with over 55 g of protein, as well as a great mix of macro- and micro-nutrients.

Beef meatballs, with no spaghetti
There are pizza restaurants, whose specialty is pizza, even though they usually have a few side dishes. Not healthy enough?
Well, don’t despair, there are meatball restaurants too. I know of at least one, The Meatball Shop, on 84 Stanton Street, in New York City.
Finally a restaurant that elevates the "lowly" meatball to its well deserved place!
Meatballs are delicious, easy to prepare, and you can use quite a variety of meats to do them. Below is a simple recipe. We used ground grass-fed beef, not because of omega-6 concerns (see this post), but because of the different taste.
- Prepare some dry seasoning powder by mixing sea salt, parsley, garlic power, chili powder, and a small amount of cayenne pepper.
- Thoroughly mix 1 pound of ground beef, one or two eggs, and the seasoning powder.
- Make about 10 meatballs, and place them in a frying pan with a small amount of water (see picture below).
- Cover the pan and cook on low fire for about 1 hour.

Part of the fat from the meat will be released and accumulate at the bottom of the pan. If you add tomato sauce and mix, the fat will become part of the resulting red sauce. This sauce will add moisture back to the dish, as the meatballs sometimes get a bit dry from the cooking.
Five meatballs of the type that we used (about 15 percent fat) will have about 57 g of protein and 32 g of fat; the latter mostly saturated and monounsaturated (both healthy). They will also be a good source of vitamins B12 and B6, niacin, zinc, selenium, and phosphorus.
Add a fruit or a sweet potato as a side dish to 3-5 meatballs and you have a delicious and nutritious meal that may eve impress some people!

- Prepare some dry seasoning powder by mixing sea salt, parsley, garlic power, chili powder, and a small amount of cayenne pepper.
- Thoroughly mix 1 pound of ground beef, one or two eggs, and the seasoning powder.
- Make about 10 meatballs, and place them in a frying pan with a small amount of water (see picture below).
- Cover the pan and cook on low fire for about 1 hour.

Pressure-cooked meat: Top sirloin
Pressure cooking relies on physics to take advantage of the high temperatures of liquids and vapors in a sealed container. The sealed container is the pressure-cooking pan. Since the sealed container does not allow liquids or vapors to escape, the pressure inside the container increases as heat is applied to the pan. This also significantly increases the temperature of the liquids and vapors inside the container, which speeds up cooking.
Pressure cooking is essentially a version of high-heat steaming. The food inside the cooker tends to be very evenly cooked. Pressure cooking is also considered to be one of the most effective cooking methods for killing food-born pathogens. Since high pressure reduces cooking time, pressure cooking is usually employed in industrial food processing.
When cooking meat, the amount of pressure used tends to affect amino-acid digestibility; more pressure decreases digestibility. High pressures in the cooker cause high temperatures. The content of some vitamins in meat and plant foods is also affected; they go down as pressure goes up. Home pressure cookers are usually set at 15 pounds per square inch (psi). Significant losses in amino-acid digestibility occur only at pressures of 30 psi or higher.
My wife and I have been pressure-cooking for quite some time. Below is a simple recipe, for top sirloin.

- Season the top sirloin pieces at least 2 hours prior to placing them in the pressure cooking pan.
- Place the top sirloin pieces in the pressure cooking pan, and add water, almost to the point of covering them.
- Cook on very low fire, after the right amount of pressure is achieved, for 1 hour. The point at which the right amount of pressure is obtained is signaled by the valve at the top of the pan making a whistle-like noise.
As with slow cooking in an open pan, the water around the cuts should slowly turn into a fatty and delicious sauce, which you can pour on the meat when serving, to add flavor. The photos below show the seasoned top sirloin pieces, the (old) pressure-cooking pan we use, and some cooked pieces ready to be eaten together with some boiled yam.
A 100 g portion will have about 30 g of protein. (That is a bit less than 4 oz, cooked.) The amount of fat will depend on how trimmed the cuts are. Like most beef cuts, the fat will be primarily saturated and monounsatured, with approximately equal amounts of each. It will provide good amounts of the following vitamins and minerals: iron, magnesium, niacin, phosphorus, potassium, zinc, selenium, vitamin B6, and vitamin B12.
